If you’ve never tried tofu before, these recipes are for you! Tofu is a great source of vegetarian protein that can be part of a well-rounded diet. Half a cup of tofu contains 10 grams of protein. It is important to shop for organic tofu that has not been genetically modified.
Tofu easily absorbs the flavours in a dish making it a great addition to stir frys and sheet pan dinners. Check out these tofu recipes and let me know what you think in the comments below!
Stir Fry Sesame Tofu with Veggie Fried Rice
Recipe makes 4 servings
Ingredients:
- 2 cups brown rice (cooked)
- 2 tbsp sesame oil
- 1 lb tofu (extra firm, drained, cut into cubes)
- Salt and pepper (to taste)
- 2 cups broccoli (chopped)
- 1 cup purple cabbage (sliced)
- 1 carrot (diced)
- 4 eggs (whisked)
- 3 tbsp low-sodium soy sauce
- 3 stalks green onion (sliced)
Directions:
- Heat 1 tbsp sesame oil in a large pan over medium heat and cook the tofu for 5 minutes. Season with salt and pepper and transfer to a bowl.
- To the same pan, add 1 tbsp sesame oil and cook the broccoli, cabbage and carrots until tender.
- Move the veggies to one side of the pan and add the whisked eggs. Scramble until cooked through.
- Add the rice to the pan, stir to combine and add in the tofu and soy sauce. Stir until everything is incorporated.
- Divide into bowls and garnish with the green onion. Enjoy!
Tofu Veggie Summer Rolls
Recipe makes 4 servings
Ingredients:
- 3 tbsp honey
- 2 tbsp hot water
- 2 tbsp lime juice
- 8 rice paper wraps
- 2 cups purple cabbage (thinly sliced)
- 1 red bell pepper (sliced)
- 1 English cucumber (sliced)
- 1 1/2 lbs tofu (extra firm, sliced)
Directions:
- In a small bowl, whisk together the honey, water and lime juice together.
- Fill a shallow dish with warm water and submerge a sheet of rice paper for a few seconds. Transfer rice paper to a plate and arrange the cabbage, pepper, cucumber and tofu on one side of the wrap. Fold over the filling and tightly roll until completely wrapped.
- Repeat this process until all ingredients have been used.
- Transfer onto a plate and serve with the sauce. Enjoy!
Sheet Pan Tofu and Veggies
Recipe makes 4 servings
Ingredients:
- 2 garlic cloves (minced)
- 1 tbsp paprika
- 1 tsp thyme
- Salt and pepper to taste
- 3 tbsp avocado oil
- 15 oz tofu (firm, cubed)
- 1 cup red onion (sliced)
- 1 bell pepper (chopped)
- 4 cups green beans (trimmed and halved)
Directions:
- Preheat oven to 450 F and line a baking sheet with foil.
- In a large bowl, add garlic, paprika, thyme, salt and pepper and 2 tbsp avocado oil. Whisk ingredients until combined.
- Add the tofu to the bowl and toss to coat. Pour onto the baking sheet.
- To the same bowl, add the veggies and toss with remaining oil. Pour veggies onto the baking sheet and bake for 20 minutes.
- Remove from oven, divide onto plates and enjoy!
