🍌 Gluten-Free Banana Bread

Ingredients:
- 3 ripe bananas (mashed)
- 2 eggs (room temperature)
- 1/4 cup coconut oil or olive oil (melted)
- 1/4 cup pure maple syrup or honey
- 1 tsp vanilla extract
- 1 ½ cups almond flour
- 1/2 cup oat flour (certified gluten-free)
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- Pinch of sea salt
- Optional: 1/2 cup chopped walnuts, dark chocolate chips, or seeds
Instructions:
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
- In a bowl, mix mashed bananas, eggs, oil, maple syrup, and vanilla until smooth.
- In a separate bowl, whisk together almond flour, oat flour, baking soda, baking powder, cinnamon, and salt.
- Combine wet and dry ingredients. Fold in any optional add-ins like walnuts or dark chocolate.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 45–50 minutes or until a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack.
