🍌 Gluten-Free Banana Bread

Ingredients:

  • 3 ripe bananas (mashed)
  • 2 eggs (room temperature)
  • 1/4 cup coconut oil or olive oil (melted)
  • 1/4 cup pure maple syrup or honey
  • 1 tsp vanilla extract
  • 1 ½ cups almond flour
  • 1/2 cup oat flour (certified gluten-free)
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • Pinch of sea salt
  • Optional: 1/2 cup chopped walnuts, dark chocolate chips, or seeds

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
  2. In a bowl, mix mashed bananas, eggs, oil, maple syrup, and vanilla until smooth.
  3. In a separate bowl, whisk together almond flour, oat flour, baking soda, baking powder, cinnamon, and salt.
  4. Combine wet and dry ingredients. Fold in any optional add-ins like walnuts or dark chocolate.
  5. Pour batter into the prepared loaf pan and smooth the top.
  6. Bake for 45–50 minutes or until a toothpick comes out clean.
  7. Cool in pan for 10 minutes, then transfer to a wire rack.

💡 Tips:

  • Use flax eggs (1 tbsp ground flax + 3 tbsp water = 1 egg) for a plant-based version.
  • Add 1 tbsp ground flax or chia seeds for extra hormone-supportive fiber.
  • Serve with nut butter for a protein boost!
