When building a Buddha bowl at home, I love topping it off with tahini salad dressing. This easy and delicious dressing will last in your fridge for up to 3 days. If not used immediately, it may thicken and will need to be re-blended with an extra little bit of water.
INGREDIENTS
- ¼ cup tahini paste
- 2 tablespoons lemon juice
- 2 tablespoons maple syrup
- 1 tablespoon sesame oil
- ½ teaspoon salt
- 1 tablespoon water + more if needed (up to 1/3 cup)
Add tahini paste, lemon juice, maple syrup, sesame oil and salt in a cup of a NutriBullet or blender and blend until smooth, gradually adding water.
Serves 2
WHAT IS INVOLVED IN BUILDING THE PERFECT BUDDHA BOWL?
Buddha bowls usually comprise 5 of main ingredients and are a great way to create a balanced balanced meal. They include:
1) A base – whole grains, greens or a combination of two. Brown rice, quinoa, arugula and spinach are a few options.
2) A protein source – A Buddha bowl does not have to be vegetarian. The protein can be chicken, fish, tofu, tempeh or beans (i.e. chickpeas).
3) Vegetables – lots of them! Roasted, raw or sauteed – the more colourful, the better.
4) Sauce/dressing -tahini dressing such as the one featured above is a very common dressing used.
5) Toppings – toppings can include roasted nuts (pine nuts or almonds), green onions, chilli flakes, seeds, dried seaweed, pickled red onions or cabbage.
